White Bean Salad with Roasted Red Pepper Dressing

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic
  • 3 roasted red peppers, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup finely chopped red onions
  • 2 tablespoons chopped flat-leaf parsley
  • 1/2 teaspoon chopped oregano
  • 2 (15-ounce) cans cannellini beans, rinsed well and drained
  • Salt and pepper to taste

Directions

  1. Put oil, lemon juice, garlic and peppers into a blender and process until smooth; transfer to a large bowl. Add feta, onions, parsley, oregano, beans, salt and pepper and toss gently to coat. Serve immediately or cover with plastic wrap and refrigerate overnight to allow time for the flavors to meld. Bring back to room temperature before serving and garnish with a bit more feta cheese, if you like.
