Quick Veggie Soup

Ingredients

  • 1 quart fat-free chicken broth
  • 1 14 1/2 oz. Can diced tomatoes -- undrained
  • 1/2 cup onion -- chopped
  • 1/2 cup cabbage -- chopped
  • 1 10 oz. Package frozen mixed vegetables -- thawed
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon pepper
  • 1/4 cup elbow macaroni -- whole wheat, uncooked
  • 1 cup cooked chicken -- cubed

Directions

  1. In a large saucepan, bring broth, tomatoes, onion, cabbage, vegetables and seasonings to a boil. Add macaroni; simmer for 10 minutes or until tender. Add chicken and heat through.
