YELLOW PEA SOUP with CHORIZO

Ingredients

  • 1 16 OZ. pkg ((2 1/4 cups) dried yellow split peas, sorted and rinsed
  • 4 cups water
  • 1 (10 1/2 oz) can condensed chicken broth
  • 1 cup of carrot strips
  • 6 oz smoked chorizo sausage, casing removed, cut into 1/4 inch slices
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup sliced green onions
  • 1 (11 oz can whole corn with red and green peppers

Directions

  1. In a 4-6 quart slow cooker, combine all ingredients except onions and corn; stir gently to mix.

  2. Cover; cook on low setting for 7-9 hours.

  3. About 10 minutes before serving, stir in onions and corn into the soup. Increase heat setting to high; cover and cook an additional 5-10 minutes or until corn is thoroughly heated.
