Ingredients

  • 3 cucumbers, peeled, seeded, and grated
  • 3 celery ribs, chopped
  • 8 radishes, trimmed and grated
  • 6 scallions, chopped
  • 2 cups ice cubes
  • 2 cups half-and-half
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 3 hard-cooked eggs, peeled and chopped
  • Salt and pepper

Directions

  1. Place the cucumbers, celery, radishes, and scallions in a medium bowl. Cover with the ice cubes and refrigerate until the vegetables are crisp, 1 to 2 hours.

  2. Remove any unmelted ice cubes. Stir in the half-and-half, vinegar, water, and eggs, and season to taste with salt and pepper. Serve immediately.
