Ingredients

  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 15 oz pumpkin puree
  • 12 oz fat free evaporated milk
  • 1 pie crust, standard type, unbaked, 9 inch deep dish

Directions

  1. Preheat oven to 425 F

  2. Mix sugar, salt, cinnamon, ginger and cloves in a small bowl.

  3. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Place pie shell on a cookie sheet and then pour pie filling into the shell. Bake in oven for 15 minutes. Reduce temperature to 350 F; bake 40-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.
