chilled cucumber yogurt soup

Ingredients

  • 2.5 cups yogurt
  • 1/4 cup olive oil
  • 1/4 cup finely chopped walnuts
  • 1/4 tsp minced garlic
  • 1 TBS wine vineagar
  • 1 tsp dill weed
  • 2 large cucumbers
  • aprox 1 cup milk
  • salt and freshly ground pepper

Directions

  1. pour yogurt in bowl wisk in olive oil stir in walnuts garlic vineagar and dill weed.

  2. peal cucs slice in half lengthwise and scrape out seeds

  3. cut in small dice aprox 3 cups

  4. stir cucs into yogurt and add enough milk to thin to desired consistency.

  5. add salt and pepper to taste
