battered tofu

Ingredients

  • 1 lb fresh tofu
  • 1/2 tsp salt
  • 1 large egg
  • 2 Tbsp flour
  • 1/4 cup oil
  • 1 tsp ginger root
  • 1 Tbsp sliced scallions
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 Tbsp soy sauce
  • 1/2 cup water
  • 1 tsp cornstarch combined with 2 Tbsp water

Directions

  1. Cut tofu in half, then cut into 1/2" thick slices.

  2. Sprinke with 1/2 tsp salt and set aside for 10 minutes.

  3. Lay on paper towels to absorb excess water.

  4. Combine egg and flour with whisk to make smooth batter.

  5. Heat 10" skillet over moderate flame until very hot.

  6. Add 2 Tbsp oil (add more as it gets used up during frying).

  7. Dip each tofu slice in batter and fry until light brown on both sides (fry in batches).

  8. Set aside.

  9. Heat same pan with 1 Tbsp oil, and stir fry ginger and scallion 1 min.

  10. Return fried tofu to pan. Add salt, sugar, soy sauce and 1/2 cup water.

  11. Cover and slowly bring to a boil. Cook for about 2 min, shaking pan or gently turning the tofu during cooking.

  12. Mix cornstarch and water very well, then add to pan.

  13. Gently stir until tofu is coated with a light

  14. glaze.

  15. Serve hot.
