momma’s carrot rice soup

Prep time: 30 minutes
Cook time: 70 minutes
Serves 4 people

Ingredients

  • 5 carrots (organic!)-- cut smallish
  • 1 onion- chopped
  • 2 large clove garlic
  • fresh ginger
  • oil
  • 1 Tbs sugar
  • 1/2 cup uncooked rice
  • 1 tsp fake chicken powder (optional)
  • 1 cup milk or filmjolk

Directions

  1. blender blend carrots, onion, garlic and ginger w/ 2 cups water.

  2. Strain reserving the liquid.

  3. put a small bit of oil into the soup pot

  4. Put chopped carrot and onion and sugar into pot

  5. cook on low heat for 10 or 15 minutes.

  6. Add rice.

  7. Stir and continue cooking for 2-3 minutes. (Rice soaks up any liquid that is left.)

  8. Put the reserved liquid into the pot plus enough extra water to make all the liquid equal 4C.

  9. Add fake chicken powder.

  10. Cook at least 45 min till rice is very soft.

  11. Add 1 milk.

  12. serve!
