Rabbi Stephanie’s vegetable bake

Ingredients

  • 1 medium eggplant
  • 1 large potato (maybe 2)
  • 1 medium zucchini (maybe 2)
  • 4 fresh tomatoes
  • 1c bread crumbs or matzo meal
  • basil
  • parsley
  • 3 eggs
  • 1/2 c olive oil
  • 1-1/2 cup grated mozzarella
  • 1c grated parmesan

Directions

  1. Slice eggplant into ½ inch rounds and bake at 400F till just tender (30 min? )

  2. Slice potato and boil till just tender

  3. Slice zucchini and tomatoes

  4. Mix:1c bread crumbs or matzo meal with basil and parsley

  5. Beat eggs

  6. Oil: 9 × 13 baking pan

  7. Layer as follows:

  8. 1/5 bread crumbs

  9. Eggplant slices

  10. 2T olive oil

  11. 1/5 bread crumbs

  12. ¼ of each of the cheeses

  13. ¼ beaten eggs

  14. potato slices

  15. Repeat 3,4,5,6

  16. . zucchini slices

  17. Repeat 3,4,5,6

  18. . tomato slices

  19. Repeat 3,4,5,6

  20. Bake: covered at 375 for 45 minutes. Let sit 10 minutes before serving or refrigerate or freeze and reheat.
