Gazpacho

The first true taste of summer

Cook time: 60 minutes
Serves 8 people

Ingredients

  • 2 cloves garlic
  • 3 cups chopped, seeded tomatoes (6-8)
  • 1 cup peeled, seeded, chopped cucumber (2-3)
  • 1/3 cup minced green pepper
  • 1/2 cup chopped onions
  • 2 TBSP olive oil
  • 2 tsp lemon juice
  • 1 tsp salt
  • 1/3 tsp Tabasco
  • 1 cup V-8 (we usually use low-sodium)
  • black pepper to taste
  • minced jalapenos to taste (seeds removed)

Directions

  1. Mix all ingredients in a large bowl.

  2. Refrigerate for at least one hour prior to serving.

  3. All ingredient quantities are relative.

  4. Tastes better after sitting for a day, if it lasts that long!
