Melon Granita

Ingredients

  • 1 medium sized melon.
  • 2/3 cup sugar
  • 1 tsp lime or lemon juice.
  • 3/4 cup water
  • Pinch of salt

Directions

  1. Split melon in half, scoop out seeds, peel. Cut into chunks and puree in a blender or food processor with sugar, lemon or lime juice, water and salt until completely smooth.

  2. (If you have an ice cream maker, now’s the time to use it!!)

  3. Pour mixture into dish and place in freezer.

  4. Check after about 1 hour.

  5. Once it begins to freeze around the edges, take a fork and stir the mixture, breaking up the frozen parts near the edges into smaller chunks, raking them toward the center. Put mixture back in freezer.

  6. Continue to check mixture and rake frozen parts every 30 minutes until fine crystals have formed.

  7. Takes about 3 to 4 hours to complete.
