Kasha Pilaf

Ingredients

  • 1/2 cup of chopped onions
  • 1/2 cup of sliced mushrooms (or other vegetables)
  • 2 Tbs butter
  • 2 cups of broth, water or bouillon (chicken, beef, or vegetable).
  • 1 cup of kasha
  • 1/2 tsp salt, and a pinch of pepper

Directions

  1. 1) Saute 1/2 cup of chopped onions and a1/2 cup of sliced mushrooms or other vegetables in 2 Tbs butter until slightly soft. In a medium saucepan, bring 2 cups of broth, water or bouillon (chicken, beef, or vegetable).

  2. 2) and add the sauteed veggies. Add 1 cup of kasha, 1/2 tsp salt, and a pinch of pepper, to the boiling liquid and stir.

  3. 3) Cover; reduce heat to low. Simmer 10 minutes or until most of the liquid is absorbed.

  4. 4) Fluff kasha lightly with fork before serving.

  5. Makes 4 cups.
