green gazpacho

came out too sweet. originally called for avocado but then it oxidized to quickly

Ingredients

  • 1bag of green grapes
  • 1 cucumber pealed and coarsely chopped
  • 1 cup chopped green pepper
  • 7 scallions
  • juice of one lime
  • 1 bunch fresh mint
  • salt and white pepper (to taste)
  • thin with apple juice and or white wine
  • sprigs of fresh mint for garnish

Directions

  1. puree, but not completely

  2. cover and chill
