Chunky Guacamole

(from largomason’s recipe box)

Ingredients

  • 3/4 to 1 tsp salt (depends on your taste)
  • juice of 1 lime
  • 3 avocados
  • 1/2 cup white onion, finely chopped
  • 2 roma tomatoes, finely chopped
  • 1 tsp garlic, pressed or minced
  • 3-5 Tbsp cilantro, roughly chopped
  • cayenne pepper to taste

Directions

  1. Peel the avocados, and remove the pit in the middle

  2. In a bowl, mash up the avocados, salt, and lime juice with a fork until you get the consistency you like.

  3. Fold in the onions, garlic, cilantro, and tomatoes

  4. Add cayenne pepper. How much will depend on taste, and how spicy you like things. Depending on how fresh my cayenne pepper is, I usually add in about 1/2 – 1 tsp.

  5. I’ve discovered that cayenne pepper is the secret ingredient. Even if you add in a very small amount, it will make a difference! I usually serve this guacamole with jalapeƱo corn tortilla chips.
