Banana Blueberry Muffins

Moist. Kids like them. Good way to use over-ripe bananas. Recipe can easily be doubled.

Ingredients

  • 3 large bananas
  • 1 teaspoon vanilla
  • 3/4 cup sugar
  • 1 egg
  • 1/4 cup butter, melted
  • 1 cup blueberries, frozen or fresh
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1-1/2 cups flour
  • cooking spray

Directions

  1. Spray muffin pan with cooking spray

  2. Preheat oven to 375 degrees

  3. Mash bananas in large mixing bowl

  4. Add sugar and vanilla

  5. Add lightly beaten egg

  6. Add melted butter

  7. In separate bowl, combine dry ingredients

  8. Rinse blueberries and pat dry

  9. Sprinkle 1/2 cup of flour mix over blueberries

  10. Add remaining flour mix to bananas

  11. Gently fold until almost moistened

  12. Add floured blueberries to batter

  13. Fold in blueberries just until evenly mixed and flour is moistened

  14. Using ladle, generously fill 12-muffin pan

  15. Bake 20 minutes
