Saucy Chicken over Rice

This was pretty good.
I served this with Foolproof Brown rice (http://www.recipething.com/recipes/show/2951) and peas, and the gravy that I made by reducing down the juice (for 1/2 hour) with the addition of a little flour.
I made some substitutions; I used diced tomatoes instead of stewed tomatoes so I added a tsp of sugar; instead of the salt free seasoning, I added 1 tsp of salt and a squirt of lemon juice, and I used red wine instead of white bc that was what was already open. I also raised the heat to HIGH for the last hour.
Serve with steamed green beans and a green salad with light vinaigrette.

Ingredients

  • 6 chicken drumsticks (about 1 1/2 pounds), skinned
  • 6 chicken thighs (about 3 pounds), skinned
  • 1/3 cup white wine
  • 1/4 cup chopped instant onion
  • 2 tsp chicken bouillon granules
  • 1/2 tsp dried italian seasoning
  • 1/2 tsp salt-free lemon-herb seasoning
  • 1/4 tsp garlic powder
  • 1/4 tsp dried tarragon
  • 1/4 tsp dried crushed red pepper
  • 1 (14 1/2 oz) can stewed tomatoes, undrained and chopped
  • 6 cups hot cooked rice

Directions

  1. Trim fat from chicken. Place chicken in a 4-5 quart slow cooker; stir in wine and next 8 ingredients.

  2. Cover and cook on HIGH for 1 hour. Reduce heat to LOW and cook 3 1/2 hours. Serve chicken and tomato sauce over rice.

  3. 1 serving = 1 chicken drumstick, 1 chicken thigh, about 1/2 cup sauce, and 1 cup rice.
