Blueberry Pork

I use pork chops for this.

Cook time: 40 minutes
Serves 4 people

Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons butter, divided
  • 2 onions, medium sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 2 tablespoons sugar
  • 1/4 cup grape juice
  • 2 tablespoons balsamic vinegar
  • 1 cup blueberries, frozen or fresh
  • 1 cup cherry tomatoes, chopped

Directions

  1. Preheat broiler. Broil pork, turning occasionally until cooked through, about 20 minutes. Remove to a platter; cover to keep warm.

  2. Meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of the butter.

  3. Add onions, salt and pepper; cook until onions are golden, about 10 minutes.

  4. Add sugar; cook until onions are caramelized, 3 minutes longer.

  5. Add grape juice, balsamic, blueberries and tomatoes and bring to a boil.

  6. Remove from heat.

  7. Thinly slice pork and serve with sauce.
