Beer Cocoa Muffins

Ingredients

  • 1/2 cup dark beer
  • 1/4 cup butter
  • 1/2 cup cocoa, unsweetened
  • 1 cup brown sugar
  • 1/2 cup sour cream
  • 1 egg
  • 1/2 tbsp. vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 tsps. baking powder

Directions

  1. In a small pot over medium heat, heat the beer and the butter until the butter has melted; stir. Remove from heat; whisk in the cocoa and the sugar.

  2. In a bowl, mix the sour cream with the egg and the vanilla. Fold into the beer mix.

  3. In a second bowl, combine the flour and the baking powder; fold into the batter.

  4. Preheat your oven to 350° F.

  5. Pour the batter into your muffin pan, and bake for 25 mins.
