Beef Corn Casserole

Ingredients

  • small onion diced
  • 1 lb ground beef
  • 4 medium size potatoes
  • 1 tbs ketchup
  • 3/4 cup beef broth
  • 2 tbs flour
  • 1/2 c. chedder Cheese
  • 1/2 c Sour Cream
  • Salt
  • Pepper
  • Butter
  • 1 Can of Cream Corn
  • Milk

Directions

  1. Mashed potatoes:

  2. I used about 4 medium size potatoes.

  3. Boil for 15-20 minutes

  4. drain and fluff

  5. Back in pot….add a couple tbs. of butter, salt, pepper. After butter melts, drizzle with milk and sour cream and mash them. Add some cheddar cheese and stir it in.

  6. Ground Beef:

  7. small onion diced

  8. 1 lb ground beef

  9. Saute onion in 1 tbs oil

  10. Add ground beef and cook until browned.

  11. Drain off fat if needed.

  12. Add 2 tbs flour and cook 1 minute.

  13. Add 1 tbs ketchup and 3/4 cup beef broth. Bring to boil, then reduce heat and simmer for 5 minutes.

  14. Layer ground beef in pan, I used cream corn as the veggie(1 can) then spread the potatoes on top. Sprinkle a little more cheese then bake in the oven at 350 until bubbly and brown
