Kale, White beans & Sausage

Good, can use spinach here as well.

Ingredients

  • Olive
  • Onion & garlic, chopped
  • Sweet italian sausage
  • 1 bunch of kale, cut into ribbons
  • Dried oregano
  • Sun dried tomatoes, reconstituted, and sliced
  • Penne pasta, about 8 ounces
  • parmigiana cheese, grated
  • parsely

Directions

  1. Saute the onions and garlic in the olive oil until soft.

  2. Remove the sausage from its casings and add to the onion and garlic in pan.

  3. Add the dried oregano (about 1/2 tsp).

  4. When the sausage is cooked, add the kale a little at a time until it wilts. The add the sundried tomatoes. Cook for a few minutes.

  5. Once the penne is cooked, add it to a large bowl, and sprinkle on the parmigiana cheese. Add the beans to the bowl.

  6. Then add the contents of the pan, and sprinkle with chopped parsley.

  7. Mix well.
