Cleverly brothed potatoes

Ingredients

  • 1.5 pounds of potatoes
  • 2 cups of vegetable broth

Directions

  1. Bring the broth to a boil (add your own spices if desired). While the broth is heating, peel the potatoes and cut into flat disc. Layer the cut potatoes in a pot as if you were making potatoes au gratin, pour the boiling broth over the potatoes, cover with a lid and led cook until the broth has seeped into the potatoes. Your potatoes are ready when there’s no liquid left in the pot – goes well with a meat or fish dish.
