Apricot Meatballs

Ingredients

  • 1 egg
  • 1 cup soft bread crumbs
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1/2 cup apricot preserves
  • 1/4 cup barbecue sauce

Directions

  1. In a bowl, combine the first four ingredients.

  2. Crumble beef over mixture and mix well.

  3. Shape into 1 inch balls.

  4. In a skillet, brown meatballs in several batches; drain.

  5. Transfer to a greased 2 quart baking dish.

  6. Combine preserves and barbecue sauce; pour over meatballs.

  7. Cover and bake at 350 degrees for 30 minutes or until the meat is no longer pink.
