Indian Creamed Spinach

Serves 4 people

Ingredients

  • 2 Tbs olive oil
  • 2 Tbs minced garlic
  • 1 Tbs minced ginger
  • 2 tsp curry paste
  • 1 shallot, chopped
  • 20 ounces frozen spinach, thawed, drained, and chopped
  • 1/2 tsp salt
  • 1/2 cup heavy cream
  • 1 tsp garam masala

Directions

  1. Heat a wok or skillet over medium-high heat until it is nearly smoking. Add the oil. When the oil is hot, add the minced garlic, ginger, and teh curry paste.

  2. Add the chopped shallot. Stir-fry until the shallot begins to soften, then add the spinach and the salt. Stir-fry for 1 minute or until the spinach turns a dark green.

  3. Add the heavy cream and the garam masala. Bring to a boil, then cook for another minute until the cream and spinach are heated through. Serve hot.
