Ricotta-Raspberry Pancakes

Ingredients

  • 3 TBS whole wheat flour
  • 2 tsp sugar
  • 1 tsp baking powder
  • 1 large egg, beaten
  • 1/2 cup part-skim ricotta cheese
  • 1/4 cup frozen raspberries
  • *tasty add: 1 TBL oat bran, handful oats, splash of soy milk as needed.

Directions

  1. Mix ingredients and fold in raspberries

  2. cook each pancake 2-3 mins on each side.

  3. Makes 4 pancakes
