Fake meat loaf

This hearty loaf is deeply satisfying, either as a one-course meal or served with a simple salad.

Ingredients

  • 2 cups cooked brown rice
  • 1 cup walnuts, finely chopped
  • 1 cup chopped mushrooms
  • 1 onion, finely chopped
  • 1/2 medium bell pepper, finely chopped
  • 2 medium carrots, shredded or finely chopped
  • 1 cup wheat germ
  • 1 cup quick-cooking rolled oats
  • 1/2 teaspoon each: thyme, marjoram, sage
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • Spray oil
  • Barbecue sauce or ketchup

Directions

  1. Note: For the mixture to hold together, the vegetables should be chopped as finely as possible. This is easily accomplished with a food processor.

  2. Preheat the oven to 350 degrees.

  3. Combine all the ingredients except the barbecue sauce or ketchup; mix for 2 minutes with a large spoon. (This will help bind the loaf together.)

  4. Pat the mixture into an oil-sprayed 5-by-9-inch loaf pan and top with barbecue sauce or ketchup. Bake for 60 minutes. Let stand for 10 minutes before serving.
