Aromatic Almond Elixir

This Asian-influenced concoction is sublime with Mediterranean-style grain dishes, like rice or couscous with pistachios, roasted red peppers, and preserved lemon.

Ingredients

  • 2 cups fresh pineapple, roughly chopped
  • 1 quart almond milk
  • Juice and zest of 1 lime
  • 1/2 lemongrass stick, crushed
  • Mint leaves, about a dozen
  • 1 (14-ounce) can sweetened condensed milk

Directions

  1. Blend together all ingredients except condensed milk.

  2. Add condensed milk, a spoonful at a time, until desired sweetness is achieved.

  3. Strain through a fine sieve.

  4. Serve chilled in a highball glass.
