INDIAN Yogurt-Cucumber Salad

Anything “Raita” is yogurt salad that is made with raw and sometimes cooked vegetables such as cucumbers, onions, beets etc and flavored with herbs & spices. Usually served chilled as a side dish. Goes VERY well with rice dishes and grilled meat. Bon appetit!

Serves 2 people

Ingredients

  • 2 large cucumbers, peeled and finely grated
  • 1 cup yogurt, plain
  • 1 green chili, finely chopped [optional]
  • 2 teaspoons fresh coriander/cilantro leaves, finely chopped
  • 3-4 teaspoons sugar
  • Salt to taste
  • Cilantro for garnishing

Directions

  1. Skin cucumbers and grate, either finely or coarsely. Remove excess juice by straining through a vegetable strainer or just use your hands.

  2. Mix green chili, cilantro leaves, sugar & salt into the yogurt. Add cucumber and mix well. Garnish with a sprig of cilantro & serve chilled.
