Fried Asian Noodles

Ingredients

  • 250g noodles
  • salt
  • 2 chicken fillets
  • spring onions, chopped
  • 2 garlic cloves, crushed
  • 1-2 dried chilli peppers
  • 5-6 tbsp oil
  • 3 tbsp soya sauce
  • 1-2 tbsp lemon juice

Directions

  1. Cook noodles (don’t overcook!) and drain well in a sieve

  2. Cut the chicken into thin strips

  3. Crush/finely chop the chilli peppers

  4. Brush the pan with 3-4 tbsp oil, heat to medium-high heat

  5. Fry the chicken for several minutes

  6. Move to the side, add more oil and brown the onions, ginger, garlic and chilli flakes

  7. Add the rest of the oil and stir in the noodles

  8. Add soya sauce and lemon juice
