Buttermilk Oatmeal Muffins

We LOVE this recipe because you can add and do so much with it to make it different every time. I have listed the optional add-ins to the ingredient list. You can just choose which fruit and spice(s) you want and add. Remember, if you add something soft or really moist, like mashed banana or apple sauce, it will change the liquid amount. You might need to add another 1/4 cup flour. Also, you can use the dry buttermilk. Follow package directions and soak the oats in water.
This makes 24 regular sized muffins, or 18 of the larger size. Depends on your pan.

Ingredients

  • 2 cups oats (1 C slightly ground, 1 C regular)
  • 2 cups buttermilk
  • 2 eggs, beaten
  • 1 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Optional add-ins:
  • mashed bananas
  • apple sauce
  • dried fruit: craisins, apples, apricots, pineapple, orange zest, mixed (cherry/craisins/blueberries -my favorite)
  • fresh fruit: apples, blueberries, cranberries, etc.
  • Spices: cinnamon, allspice, ginger, crystalized ginger, cloves, nutmeg, lemon juice

Directions

  1. In a bowl, soak oats in buttermilk for 15 minutes.

  2. Stir in egg, sugar and oil.

  3. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened.

  4. Fill greased or paper-lined muffin cups three-fourths full.

  5. Bake at 400 degrees F for 16-18 minutes or until muffins test done.

  6. Cool in pan 5 minutes before removing to a wire rack.
