apple lentil horseradish soup

Serves 4 people

Ingredients

  • 1 bag dried lentils du Puy or green lentils, rinsed (2.5 cups)
  • 1-2 cup chopped onions
  • 2 green apple, peeled and chopped (about 1 cup)
  • 1 inch
  • 1/2 a lemon w/ rind
  • water
  • Salt and freshly ground pepper
  • 1/4 cup whipping cream
  • 1/2 inch of horseradish (grated very fine)
  • 1 large clove or garlic

Directions

  1. saute union ginger and garlic in some oil

  2. Place lentils and water and bring to boil over high heat. Reduce heat to low, cover and simmer for 40 minutes or until lentils are completely soft.

  3. during this time chop up apples and lemon and add them too.

  4. garnish with cream with horseraddish

  5. .

  6. Stir together cream and horseradish in a small bowl. Stir into soup and reheat when needed.
