breakfast cookies

Ingredients

  • -2 cups dark brown sugar
  • -2 1/2 cups of rolled oats
  • -3 1/2 cups of whole wheat flour
  • -1 tablespoon of baking soda
  • -1 teaspoon of baking powder
  • -1 teaspoon of salt
  • -1 1/2 teaspoons of ground cinnamon
  • -3/4 cup of flaxseed meal (or 1/4 cup of unsweetened applesauce, pumpkin, or oil)
  • -2 medium mashed bananas (a little more than 1/2 cup, or 1/2 cup of pumpkin if you didn't use it above)
  • -2 tablespoons of water
  • -3 whole eggs (the original recipe said 5 egg whites)
  • -1 1/2 teaspoons of vanilla
  • -3/4 cup of craisins*
  • -1/4 cup of pecans*
  • -1/3 cup of dates*
  • *can be replaced with any dried fruit or nuts

Directions

  1. put the dried fruit in a bowl with boiling water and let soak until you need to add it.

  2. preheat oven to 350 degrees.

  3. in a large bowl, mix together all of the dry ingredients.

  4. make a well in the center and pour in the wet ingredients, mix together slowly.

  5. add in the dried fruit and nuts.

  6. roll into golf ball sized balls and press to about 1/2 thick on a greased cookie sheet. place cookies about 2" apart.

  7. place in oven and cook for 8 minute for chewy cookies or 10-12 for dry cookies.

  8. remove from sheets to let cool.

  9. after cooled, place in bags (together or individually) and freeze for later use or eat right away.
