Tomato Fritters w/ Mixed Greens

Ingredients

  • 5 tomatoes, cubed
  • 1/2 teaspoon sugar
  • 1 teaspoon rice wine vinegar
  • 1 clove garlic, minced
  • 1/2 cup whole wheat flour
  • 1/2 cup crushed cornflakes
  • 1 tablespoon crumbled crisp bacon
  • ⅓ cup oil
  • Kosher salt and freshly ground black pepper to taste
  • 5 cups mixed greens

Directions

  1. Combine all ingredients except salad greens and mix well. Scoop heaping tablespoons of mixture into the palm of your hand to shape into rounds about ½-inch thick. Place rounds into preheated nonstick skillet over medium heat. Cook until golden brown on both sides, turning only once. Serve on top of mixed greens.
