Beach Cobb Caesar Salad Wraps with Goat Cheese Pizza

Ingredients

  • 11/2 tablespoons white wine vinegar
  • 1 tablespoon finely minced shallot
  • 1/2 tablespoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons Filippo Berio Extra Virgin Olive Oil
  • 5 cups mixed salad greens
  • 4 ounces shredded cooked chicken breast
  • 4 whole wheat wraps
  • French bread
  • 4 ounces goat cheese
  • Roasted red and yellow peppers
  • Optional additions:
  • 1 hard-boiled egg, peeled and chopped
  • 1 strip bacon, cooked and crumbled
  • 1 medium tomato diced
  • 1/2 cucumber, seeded and diced
  • 1/2 avocado, diced
  • 1/4 cup crumbled blue cheese

Directions

  2. Preheat oven to 360°F. Whisk vinegar, shallot, mustard, salt, and pepper together in a small bowl. Whisk in 2 tablespoons olive oil until emulsified. Place salad greens and chicken in a large bowl. Add half the dressing and toss to coat. Toss in one or more optional additions. Roll in whole wheat wraps and serve with remaining dressing.

  3. Meanwhile, cut the French bread into 4-inch slices. Cut each slice in half lengthwise. Lightly coat each piece with remaining 2 tablespoons olive oil and bake in the preheated oven for 7-10 minutes. Remove from oven and spread with the goat cheese. Top with roasted red and yellow peppers and serve with Caesar Salad Wraps.
