Easy Spinach Artichoke Dip

A party favorite that’s easy enough to adapt to your tastes.

Ingredients

  • 1 10oz package of frozen CHOPPED spinach (thawed and drained)
  • 1 large can of chopped artichoke hearts, drained
  • 1 cup of shredded mozzarella cheese
  • 1 cup of grated parmigiana cheese
  • "White sauce" (2 tbsp of butter, 2 tbsp flour, 1 cup of milk)
  • 2 cloves of minced garlic
  • 1/2 can of chopped water chesnuts
  • salt and pepper to taste
  • red pepper to taste (adds a nice kick!)

Directions

  1. Melt butter over low heat with minced garlic.

  2. Blend in flour and cook over a low heat until smooth and bubbly.

  3. Remove from heat and stir in milk.

  4. Heat to boiling, stirring constantly.

  5. Blend in the rest of the ingredients.

  6. Season to taste.

  7. Serve with fresh baked sour dough bread, crackers, or a veggie platter for dipping!
