quinoa with tomatillo and cilantro sauce

Ingredients

  • 4-5 cups cooked quinoa, from about 1 1/2 cups of uncooked quinoa – can also use cooked rice
  • Tomatillo and cilantro sauce
  • 6 tomatillos, washed and quartered
  • 1 bunch of cilantro, washed and large parts of stems removed
  • Juice from 1 lime
  • 2 tbs chopped white onion
  • 2 garlic cloves, crushed
  • 1 hot pepper, jalapeno or serrano – optional
  • Salt and pepper to taste

Directions

  1. Combine the tomatillos, cilantro, lime juice, chopped onions, crushed garlic, hot pepper (if using), salt and pepper to taste in a blender, mix until a smooth sauce is obtained.

  2. Mix the sauce with the cooked quinoa, serve warm. Can also be made ahead and re-heated before serving.
