Theresa’s Bean Fiesta

A great party appetizer to eat over tortilla chips.

Ingredients

  • 1 can of black beans
  • 1 can pinto beans (optional)
  • 1 can of whole kernel corn
  • 1 diced tomato
  • 1/2 bunch of fresh cilantro, minced
  • 1 lime (juiced)
  • salt and pepper to taste
  • 1/2 onion, minced
  • 1 avocado, diced

Directions

  1. Drain and rinse all beans and corn.

  2. After chopping, dicing, and mincing everything else, combine ingredients.

  3. Serve on chips.
