OLD-FASHIONED TURKEY MEATLOAF

Ingredients

  • 1 Tbs olive oil
  • 1 medium onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 celery stalk, finely chop
  • 1 garlic clove, minced
  • 1 1/2 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 tsp Worcestershire sauce
  • 2/3 cup ketchup
  • 2 1/2 pounds lean ground turkey
  • 1 1/4 cups unseasoned bread crumbs
  • 2 large eggs, lightly beaten
  • 1/2 cup fresh flat-leaf parsley

Directions

  1. Preheat the oven to 350 degrees fahrenheit.

  2. Heat the olive oil in a large nonstick skillet over a medium flame. Add the onion, carrot, and celery and cook, stirring occasionally, for about 10 minutes, until carrots are tender. Add the garlic and cook for 1 minute more. Remove from the heat and stir in the salt, pepper, Worcestershire, and 1/3 cup of the ketchup.

  3. In a large bowl, combine thoroughly the contents of the skillet with the turkey, bread crumbs, eggs, and parsley.

  4. In a shallow baking pan, form the mixture into a loaf and spread the remaining 1/3 cup ketchup over it.

  5. Bake for 1 hour.
