Pepper Chicken

Ingredients

  • 3 lbs. Chicken, skinless bone-in cut into small pieces
  • 1/2 cup Whole Black Peppercorns, dry roasted and ground
  • 1 1/2 tsp. Coriander Seeds, dry roasted and ground
  • 2 tsp. Cumin Seeds
  • 3 Onions, med. sliced
  • 2 Tomatoes, diced
  • 2 tsp. Garlic-Ginger paste
  • 1/2 tsp. Turmeric Powder
  • 2" Cinnamon Stick, ground
  • 1 Cardamom Pod, seeded and ground
  • 4 Cloves, ground
  • 1 tsp. salt

Directions

  1. In a large pot, heat 3 Tbsp. oil.

  2. Add onion and roast until translucent.

  3. Add tomatoes, salt, garlic-ginger paste and turmeric. Cook for 5 min.

  4. Add chicken pieces, mix and cover. Cook for 5 min.

  5. Add 2 cups water, black pepper, cumin, coriander, cinnamon, cardamom, cloves. Add salt to taste.

  6. Cook over medium heat to desired sauce thickness
