Southwestern salad

The home version of one of my restaurant favorites.

Serves 4 people

Ingredients

  • avocado
  • lime
  • leaf lettuce or romaine
  • KRAFT Reduced Fat Ranch dressing
  • Chicken tenders
  • canola oil
  • S & P
  • K.C. Masterpiece/Original Barbecue Sauce
  • corn
  • cheddar cheese
  • black beans
  • tomato diced
  • cilantro chopped

Directions

  1. Squeeze 1/2 – 1 small lime into a bowl and add 1/2-1 avocado cut in cubes. Mix.

  2. Chiffonade the lettuce into chopped size; combine with a couple of Tbs of the Ranch dressing.

  3. Cook the chicken tenders in a little canola oil and S & P. Half way through add a couple of Tbs of barbecue sauce (K.C. Masterpiece/Original).

  4. Add to the bowl, 1 can of drained corn (or 2 ears of corn cut off the cobb), 1/2 – 1 cup of shredded cheddar cheese, 1 can drained black beans, 1 tomato diced, 2 Tbs chopped cilantro, and the tenders diced.

  5. Layer a bowl with the dressed lettuce, add the contents of the bowl on top.

  6. Add more Ranch dressing is you like.
