Kohlrabi Soup

Ingredients

  • 1 1/2 lbs of fresh Kohlrabi, chopped
  • 2 Small carrots, chopped
  • 4 Small potatoes, chopped
  • 7 Tablespoons of EVOO
  • 1 Large White Onion
  • 2 large cloves of Garlic, chopped
  • 3 strips of Bacon

Directions

  1. the kohlrabi, completely removing the tough green skin. Cut into 3.4" pieces

  2. In a soup pot, add the EVOO, Garlic, Onions, and bacon and cook quickly under medium heat for 4-5 minutes.

  3. Add the remaining ingredients, Carrots, Potatoes and Kohlrabi. Blend all the ingredients well in the soup pot. Add 2 quarts of cold water, and increase heat to a slow boil. Once soup is boiling, reduce heat to low, and cook covered for 1 hour.

  4. When finished, remove from heat, remove bacon, and flavor to your taste with salt and pepper.
