Lemon Blueberry Fluff

Ingredients

  • 1 - 3 oz pkg lemon flavored jello
  • 1 C boiling water
  • 1/4 t grated lemon peel
  • 2 T lemon juice
  • 3/4 C cold water
  • 2 egg whites
  • 1 9 oz ctn frozen berries - use fresh berries if in season - 1 1/2 C
  • 1 t corn starch
  • 1/2 c cold water
  • 2 T sugar
  • a few drops vanilla

Directions

  1. In a large bowl dissolve gelatin in boiling water. Stir in lemon peel and 3/4 C cold water. Chill till partially set.

  2. Add unbeaten egg whites to gelatin mixture. Beat with electric mixer till light and fluffy, about 1 – 2 minutes. Pour into 8 – 5 oz custard cups. Chill till firm. (Slight separation in layers may occur.)

  3. Meanwhile, in a sauce pan, crush 1/2 C of the berries. Blend together cornstarch and 1/2 C cold water. Add to crushed berries. Cook till thick and bubbly. Cook and stir 1 minute longer. Remove from heat adding the rest of the berries and the vanilla. Chill sauce.

  4. To serve, unmold fluff into individual dessert dishes. Spoon sauce over each.
