Bennigans Pasta Bowties

Ingredients

  • 4 C. Pasta bowties
  • 2 tsp. vegeable oil
  • 2 eggs whipped
  • 1 1/2 cups seasoned italian breadcrumbs
  • 1/3 C freshly grated parmesan cheese
  • 4 C vegetable oil for frying

Directions

  1. Bring 2 qts of water and salt to a boil in a large pot. add the bowties and cook uncovered for 13 mins, stiring occasionally to seperate noodles

  2. Test the noodles for donenss using a spoon to lift a sample from the water. allow to cool briefly. Pinch the pasta bowties in the middle it should be flexable but still firm. Re check every 30 seconds until done

  3. Drain pasta in colander, rinse with cold water to remove excess starch. Shake colander and toss noodles to drain. toss with 1 tsp vegetable oil to prevent sticking

  4. Refriderate noodles for 30 mins before breading

  5. Mix italian breacrumbs with parmesan cheese and blend well to make coating mixture

  6. heat oil to 350 degrees

  7. Coat pasta bowties with the whipped eggs

  8. place bowties into the italian breading and coat completely. place on wax or parchment paper

  9. Fry bowties for one minute. remove from oil and place onto paper towels to drain off excess oil

  10. sprinkle with parmesan cheese
