Lemon Merangue Pie

Makes an 8" pie or a 10" pie.

Ingredients

  • 8" pie
  • 1/2 C & 1 T flour
  • 1 1/4 C sugar
  • 1 3/4 C water
  • 1 1/2 T butter
  • 1/4 t salt
  • 3 egg yolks
  • 1/4 C lemon juice
  • 2 T grated lemon rind
  • 10" pie
  • 3/4 c & 1 1/2 T flour
  • 1 3/4 C sugar
  • 2 1/2 C water
  • 3 T butter
  • 1/2 t salt
  • 4 to 5 egg yolks
  • 1/2 C lemon juice
  • 3 T grated lemon rind

Directions

  1. Mix flour, sugar, & salt. Stir in water, add butter. Cook till thick. Separate eggs, beat yolks, and add to pie filling. Cook 3 to 5 minutes. Add lemon juice and rind. Pour into shell
