Apple-Cinnamon Pancakes

Ingredients

  • 1 1/4 cup(s) all-purpose flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp table salt
  • 1 cup(s) buttermilk, low-fat (1%)
  • 1/2 cup(s) unsweetened applesauce, cinnamon-flavor
  • 1 Tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1 large egg(s), lightly beaten
  • 1/2 cup(s) apple(s), diced (Braeburn variety)
  • 1 spray(s) cooking spray

Directions

  1. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next five ingredients in a large bowl; stir with a whisk. Combine buttermilk and next four ingredients in a small bowl; stir with a whisk until smooth. Add buttermilk mixture to flour mixture; stir until smooth. Stir in apple.

  2. Spoon about 1⁄4 cup batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked. Yield: 10 servings (serving size: 1 pancake).
