Vegetarian Shepherd’s Pie

You can use instant mashed potatoes as well

Prep time: 30 minutes
Cook time: 30 minutes
Serves 6 people

Ingredients

  • 2-3 medium potatoes, peeled
  • ~1 cup milk
  • 2 tbs diced garlic
  • NOTE: Use what veggies you have on hand. Only 3-4 are necessary:
  • 1/2 -1 cup carrots, chopped
  • 1/2 -1 cup celery, chopped
  • 1/2 - 1 cup onion, chopped
  • 1/2 -1 cup mushrooms, quartered
  • 1/2 - 1 cup fresh spinach
  • 1/2 - 1 cup asparagus, diced
  • 2 veggie burgers, chopped (Morningstar Farms Grillers)
  • 2 cups vegetable stock
  • 1/2 cup dark/brown beer
  • ~3 tbs flour
  • Salt & pepper to taste

Directions

  2. Potatoes:

  3. Halve potatoes.

  4. Place in pot and cover with water, pinch of salt.

  5. Place on high heat (covered) until water boils.

  6. Boil for 45 minutes or until potatoes are soft.

  7. Remove from heat and add milk, salt, and pepper to taste.

  8. Mash potatoes, leaving them slightly chunky.

  9. Filling:

  10. Preheat Dutch oven on medium-high heat on stovetop. Spray with nonstick cooking spray or 1 tbs of olive oil.

  11. Add garlic and quickly add all veggies so garlic does not burn.

  12. Sauté until onions and celery are transparent and other veggies are cooked. Add salt and pepper to taste.

  13. Add chopped veggie burger and cook through.

  14. Add stock and beer, and simmer until liquid begins to decrease.

  15. Add flour one tbs at a time until filling reaches a thick, gravy-like consistency.

  16. Turn on broiler and remove Dutch oven from heat.

  17. Top the filling with the mashed potatoes and place under the broiler for 5 minutes or until mashed potatoes begin to brown.
