Chicken Cordon Bleu

Ingredients

  • 6 chicken breast halves, skinned, boned
  • 3/4 cup cornflakes, crushed
  • 6 thin slices ham
  • 6 thin slices Muenster or Swiss cheese
  • 3 tablespoons butter or margarine, melted
  • 1 cup Chicken Gravy Mix (link to recipe in directions)
  • 2 cups water

Directions

  1. Preheat oven to 350

  2. Lightly butter a 13” x 9” baking dish; set aside

  3. Place each breast half between 2 layers of waxed paper or plastic wrap

  4. Using a mallet or rolling pin, pound to 7” x 4”

  5. Pour crushed cornflakes into a pie plate; set aside

  6. Cut ham slices and cheese slices in half

  7. On 1 side of each flattened chicken breast, layer 1 piece of ham and 1 piece of cheese.

  8. Repeat layers

  9. Fold chicken breast over layered ham and cheese

  10. Brush melted butter or margarine over folded chicken breasts or just dip them in the melted butter

  11. Press each breast into cornflakes

  12. Arrange in prepared baking dish

  13. Bake 30 minutes.

  14. In sauce pan, combine Chicken Gravy Mix and water

  15. Cook and stir until smooth and slightly thickened

  16. Pour over partially cooked chicken breasts

  17. Cover and bake about 30 minutes longer

  18. To serve, arrange chicken on a platter
