nomi’s lax pudding

Definitely a Nomi recipe! Every birthday, special occasion, or just a chance she got to affect the dinner menu, this one seemed to come up for consideration. And can you blame her?

Ingredients

  • 7 oz. of lox (rimmad eller rökt lax)
  • 1/2 lb of potatoes
  • margarine or butter
  • 3-4 Tbsp fresh dill, chopped
  • white or black pepper
  • 5 eggs
  • 11/2-2 cups whole milk or light cream
  • 1/2 cup melted butter for serving
  • (david made it with 200g lax and 600g potatoes, sauteded leek and onion)

Directions

  1. Heat oven to 350 F.

  2. Slice the salmon/lox and let it soak in the milk for half an hour.

  3. Peel the potatoes and cut them into thin slices.

  4. In a pan, alternate layers of potatoes and lox, sprinkling pepper and dill in between layers. Finish with a layer of potatoes.

  5. Beat the eggs and milk together. Pour over the casserole. Bake for 1 hour.

  6. Serve with melted butter.
