Chicken Marsala

Serve with roasted red potatoes and steamed green beans mixed with butter and black pepper.

Ingredients

  • 1/4 cup tablespoons flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 chicken breasts, butterflied
  • 4 teaspoons canola oil
  • 2 garlic cloves, minced
  • 2 tablespoon diced onions
  • 4 cups quartered mushrooms
  • 1 cup Marsala wine
  • 4 tablespoons half-and-half

Directions

  1. Mix flour with 1/4 teaspoon salt and black pepper.

  2. Dredge both sides of chicken breasts in flour mixture.

  3. Heat canola oil in large skillet over medium heat.

  4. Saute garlic and diced onion 1 minute.

  5. Add quartered mushrooms and cook 5 minutes.

  6. Push mushrooms to side of pan and add chicken; sear 2 to 3 minutes a side and then add 1/3 cup marsala wine.

  7. Reduce heat and let wine reduce by half; add 1 tablespoon half-and-half and reduce by half.

  8. Serve.
