The Kerrnel’s “Fowl Pig” Chili

Ingredients

  • 1 lb Ground Turkey
  • 1 lb Ground Sausage (or 90/10 Ground Beef)
  • 2 16oz cans Red Kidney Beans
  • 1 16oz can Navy Beans
  • 1 28oz can Crushed Tomatoes
  • 1 16oz can Diced Tomatoes
  • 1 12oz can Tomato Sauce
  • 1 Carrot, finely chopped
  • 1 large Onion, diced
  • 1 medium Green Pepper, diced
  • 4 cloves Garlic, finely chopped
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tbsp Worchestershire
  • 1/2 tsp Thyme
  • 3 tbsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1 tsp Parsley
  • 1/2 tsp Coriander
  • 1 tsp. Old Bay (optional)
  • 1 tsp Cayenne Pepper (optional)

Directions

  1. Brown turkey and sausage in a large frypan. Do not overcook.

  2. Add browned meat to large crock pot or dutch oven.

  3. Thoroughly rinse beans in a strainer, and add to meat. (Note that this will reduce the sodium content by ~40% from values listed below.)

  4. Add canned tomatoes, vegetables, garlic, and spices to meat and beans in cooking vessel. Stir well.

  5. IF USING DUTCH OVEN: Preheat oven to 300F, cook in oven, covered, for 6 hours. OR smoke covered in pitbarrel for 4-6 hours, stirring occasionally.

  6. IF USING CROCK POT: Set on low, cook covered for 6 hours, or overnight.
