The Kerrnel’s Salsa

Need a blender or food processor. Can easily cut all ingredients in half for a “personal” portion that will last one person a couple of days in the fridge.

Serves 15 people

Ingredients

  • 2 large Roma tomatoes
  • 2 Jalapenos
  • 1 large Sweet Onion (Vidalia)
  • 1/3c fresh Cilantro
  • 4 cloves Garlic
  • 2 14.5oz cans Diced Tomatoes (in sauce)
  • 2 tbsp Red Wine Vinegar
  • 1 tbsp Cumin
  • 1/4 tsp Salt
  • 1/2 tsp Cayenne

Directions

  1. Rough chop all vegetables and cilantro, add to blender.

  2. Finely chop garlic, or use a garlic press if preferred. Add to blender.

  3. Add canned tomatoes to blender. Add vinegar and spices.

  4. Cover blender and pulse to a rough puree.

  5. Taste and adjust seasoning as desired.
